How to Smoke:

Smoking can either be done with a specific type smoker (like the picture to the left) or you can make your grill an excellent smoker. If you use the grill,  make sure and use the indirect fire as mentioned in the grilling. The only difference would be in the aluminum tray,...you can either use Coke or you can use apple cider vinegar mixed with water to add moisture. You will also need to apply wood chips in order to get that smoke. I suggest that you use the wood chip guide on the Web to determine the type wood you will use with your meat choice. Soaking the chips 30 mins prior in HOT WATER will help in getting the water into the wood which will create a better and cleaner smoke. You will need to reapply the moistened chips each hour in order to gain the benefits. You can also use a variation of wood chips to get the taste you are looking for.  

You will need to turn the meat every 30 mins in order to make sure it cooks evenly. When using a smoker like the one to the left, it's rather straight forward. You will need to only soak your chips and pick either a Coke or apple cider vinegar for the pan to help with the moisture inside the unit. The chips will need to be replaced in the box every two hours. I have used my smoker in temps below zero which is very helpful in not having to keep adding chips or turning the meat. 

Always,  Always Use a temp probe and cook according to temp.
